What you should know
- Read food labels carefully.
- Do not eat anything that contains wheat, rye, or barley.
- The following are safe in any amount: corn, potatoes, rice, soybeans, tapioca, arrowroot, carob, buckwheat, millet, amaranth, and quinoa.
- Distilled white vinegar does not contain gluten.
- Malt vinegar does contain gluten.
Hidden Gluten
Grains are used in the processing of many ingredients, so seek out hidden gluten. The following terms found on food labels may mean there is gluten in the product.
- Hydrolyzed Vegetable Protein (HVP) unless made from soy or corn
- Flour or cereal products, unless made with pure rice flour, corn flour, potato flour, or soy flour
- Vegetable protein, unless made from soy or corn
- Malt or malt flavoring, unless from corn
- Modified starch or modified food starch, unless arrowroot, corn, potato, tapioca, waxy maize, or maize
- Vegetable gum, unless carob bean, locust bean, cellulose gum, guar gum, gum arabic, gum aracia, gum tragacanth, xantham gum, or vegetable starch
- Soy sauce or soy sauce solids, unless certain they do not contain wheat
Why are weight-loss diets difficult for celiacs?
Most ready diets are not suitable as they contain some amount of gluten. MealChoices does not prepare bulk meaks, but all meals are individually prepared, so special care can be taken to eliminate any gluten-containing ingredients.
When people with celiac disease avoid gluten, they tend to use more starch or derivatives. This can increase glycemic food. The result is bloating, sugar crashes, and weight gain. At very least, weight loss is difficult. This is why MealChoices focuses on delicious, lower-carb foods.
